Deconstructed Falafel

Most people love the taste of falafel but the truth is that most of those yummy balls of goodness are fried in yucky oil.  In this deconstructed falafel dish you can get all the great taste of falafel without that heavy, gross feeling you get from fried food.  This simple fresh salad is great warm or cold, on it’s own or with a salad and some pita.  Or drizzle some tahini over top and it’s a Mediterranean dream-meal.

Servings: 2

Time: 7 minutes

What you need: a bowl and a fork or potato masher

Ingredients:

  • 1 can chickpeas
  • ½ red onion, finely diced
  • ¼ cup parsley, chopped
  • 1 small cucumber or ½ English cucumber, diced
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • Sea salt and black pepper, to taste

Directions:

Combine chickpeas, olive oil, lemon juice, spices, salt and pepper in a medium bowl and lightly mash with a fork or potato masher.

Add in the onion, cucumber, and parsley then toss well to combine.

Taste, and adjust seasonings if necessary.

This is great served with a tahini sauce
