The Classic Ice Cream Sandwich

You just can’t beat two gluten free chocolate chip cookies sandwiched around a scoop of creamy vanilla ice cream. This super easy instant classic will have everyone asking for seconds.

What You’ll Need

2 Glow Gluten Free Chocolate Chip Cookies

1 Scoop of gluten free/dairy free vanilla ice cream softened in the fridge

(We used Luna & Larry’s Vanilla Island)


1. Scoop softened vanilla ice cream and place between two cookies.

2. Add slight pressure so that the cookies stick to the ice cream.

3. Serve immediately or freeze until right before serving.
