Chances are, if you’re gluten free/dairy free and invited to a dinner party you will be sitting at the dessert table drinking decaf and lusting after profiteroles.  Well, lust no more.  Next time, offer to bring a fabulous (and super easy) gluten free/dairy free treat and you’ll be the rock star of the dessert table!

Triple-Berry Gingersnap Crumble

Sometimes plain fruit just doesn’t cut it for dessert.  We added a lemon twist, a maple edge and a spicy gingersnap crumble to raise the bar on this juicy and delish gluten free/dairy free Triple Berry Gingersnap Crumble.

Fruit Ingredients:

3 generous heaping cups of mixed berries

(We used fresh blueberries, raspberries, blackberries)

½ teaspoon cinnamon

2 teaspoons lemon juice

2 tablespoons maple syrup

Topping Ingredients:

1 package (7 cookies) Glow Gluten Free Gingersnap Cookies

(Crumbled into lima bean sized bites)

3 tablespoons organic Spectrum shortening

Instructions:

  1. Preheat oven to 350.
  2. Toss berries, cinnamon, lemon juice & maple syrup in glass pie plate
  3. Coat Gingersnap crumbles with shortening and sprinkle evenly on fruit
  4. Bake about 20 minutes until fruit bubbles and crumble is browned
  5. Serve warm and enjoy!
