Sin-Free French Toast

Editors Note:  I believe that we should treat our bodies the best we possibly can, however that doesn’t mean you need to stuff your mouths with things that make you squimish! You can eat healthy and still be completely satisfied at the end of the meal by finding healthy options for your favorite foods.  This recipe is a GREAT way to make breakfast fun again whithout any guilt. ~Nitika~

Typically when we think of French Toast, the first thing that comes to our minds is that it isn’t healthy and we shouldn’t eat it.  Have no fear Bella life readers that just isn’t true anymore! I came up with a delicious, healthy, and flavorful French toast recipe for you to try. It’s loaded with antioxidants, spices and simple ingredients so it will be easy on your digestive system, your heart, and will fit nicely in to any eating routine you currently have.  Invite friends or family over for brunch, and get ready for them to sing your praises once they taste this Sin-Free French Toast!

Mix:

2 eggs (egg substitutes for vegans)

1/2c unsweetened coconut milk (brand: so delicious)

1/2c pomegranate juice

1tsp cinnamon

1t vanilla extract

1/4t all spice

cardamom & salt

2T maple syrup

Directions: After mixing all the ingredients in a bowl.  Slice 6 pieces of bread of your choice diagonally and dip into mixture for 30 sec. You can then fry it on a pan with some ghee or butter of your choice or you can bake it in the oven (350 degrees) for 20 minutes or until crisp.

Then top w/some raspberries, coconut and drizzle on a touch of maple syrup. Mmmm… enjoy!
