Vanilla Mint Truffles
(Makes about 18 truffles)
Ingredients:
- 1 cup nuts, ground into a powder (e.g almonds, walnuts, pecans or cashews)
- 1/2 cup nut or seed butter (unsweetened, unsalted) e.g. tahini, peanut or almond butter
- 1/4 cup raw cacao powder
- 1/3 cup sweetener. (we used a combo of agave nectar and honey, but maple syrup is also great)
- dash of sea salt
- 1 teapoons Mint extract
- 1 teaspoon vanilla extract
Directions:
Put nuts into a blender and grind into a powder. Then add all other ingredients (nut butter, cacao powder, sweetener, salt, mint and vanilla extract) and continue to blend until all ingredients come together in a thick mass.
Roll into small truffles, and store in the refrigerator to solidify.
Dust with dried coconut or more cacao powder to make them fancy.

Raw cacao power is a super (duper) food full of antioxidants and minerals like magnesium and iron. Move over spinach. I’d much rather have the cacao. Alright, so you need both. I love this recipe because it is all about what I call “naked” ingredients.
