Sesame Miso Soba Noodles

Sesame Miso Soba Noodles

Time: 15 minutes

When you need that Asian noodle fix this is the perfect place to turn.  The balance of sesame and miso is the sauce is oh, so delicious.  Just slater that on some soba noodles and toss with whatever fresh veggies you have around and BOOM.  A taste of the east in less time than it would take to get delivery.

Ingredients:

  • 1 package soba noodles
  • 2 cups cabbage, finely sliced
  • 2 carrots, shredded or julienned
  • 1 cup steamed sugar snap peas
  • 1 Tablespoon sesame oil

Sauce:

  • 2 Tablespoons miso
  • 2 Tablespoons tahini
  • 1 Teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon tamari
  • 2 cloves garlic
  • ¼ cup water

Directions:

Cook soba noodles according to package directions.  Rinse with cold water and place them in a bowl.  Drizzle with sesame oil and toss well.

Steam sugar snap peas for approximately 4-6 minutes.  Prepare the cabbage and carrots then add them to the bowl with the soba noodles.

To make the dressing combine all ingredients in a blender or jar with a fitted lid and mix well until everything is well combined.  Adjust with salt and pepper, to taste if necessary

Pour the dressing over the vegetables and noodles and toss well to combine.
