Watermelon, Tomato + Mint Salad

Serves: 8

Total Time: 20 minutes

This summer staple can’t lose.  It is one of the most refreshing salad ever created. Most people make it with basil, but swapping that out for mint takes it to a whole other level of freshness.  Balsamic brings out all that sweetness and adds a little savory tang.  Then top it off with some feta.  Because all know, feta makes it betta.

Ingredients:

  • 4 cups of Seedless Watermelon, cubed
  • 4 cups of Tomatoes (any kind), cut in bite size pieces
  • 1/2 cup Mint, torn
  • 2 Large Shallots, finely sliced
  • 2-3 tablespoons Balsamic Vinegar
  • Pinch of sea salt + black pepper, to taste
  • 1/2 cup Feta, crumbled (optional)

Directions:

Put all ingredients in large bowl and mix well.  Serve immediately.
