I met Jill Brack, the founder and creator of Glow Gluten Free cookies back in November at Pamela Pekerman’sHoliday Accessories event.  Although the room was filled with interesting, savvy, and powerful New York women, some how Jill and I met and felt like we were destined to be friends in that very instant.  After getting to know Jill and her inspiring story I was able to see why we were meant to be in each others lives.  Jill Brack started Glow Gluten Free as a mom on a mission.  Her daughter Stella and her were both dealing with the dietary restrictions and changes that come up when you realize you can’t eat what most people can after being diagnosed with celiac, an auto-immune disorder in which the intestines become damaged by eating gluten, the protein found in wheat, rye and barley.  Instead of allowing her daughter to feel frustrated she created something that was undeniably delicious, comforting, and down right cool.  Now sold on over 700 stores across the east coast, including Whole Foods, she is changing the lives of gluten-free lovers everywhere!! Jill Brack is an amazing example of not giving up, giving in, or taking “no” for an answer. ~Nitika~
